Tasty Tuesday – Lemon Poppyseed Bread

Hi everyone! Another week, another Tasty Tuesday recipe. We are in the midst of winter and I don’t know about you, but I am ready for a little bit of sunshine! So I am going to share a yummy lemon poppyseed bread recipe with you today. Because lemony goodness cancels out the dreary , snow filled days . This bread is full of lemon flavor and the addition of the poppy seeds take it over the top! You’re welcome!


Lemon Poppyseed Bread

1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3 eggs, room temp
1 cup sugar
2 tablespoons unsalted butter, softened
1 teaspoon vanilla extract
2 teaspoons lemon extract
1/3 cup lemon juice
1/2 cup oil
4 tablespoons poppyseeds

zest of one lemon

1.Preheat oven to 350 degrees. Grease and flour a 9 x 5 loaf pan.

2. In a large bowl, combine flour, baking soda, baking powder and salt. In a medium bowl, combine eggs, sugar, butter, vanilla extract, lemon extract and lemon juice with a mixer until blended.
3. Pour wet ingredients into the dry ingredients and blend until smooth. Add oil, poppyseeds and zest and mix well.
4.Pour into loaf pan and bake for 45 minutes until toothpick comes out clean.
5.Remove from oven
6. Cool in the pan on a rack.
